Born in 1966 in Jerusalem, Israel. As a child, lived a few years in Siguatepeque, Honduras and later in Santa-Cruz, Bolivia and then back in Israel.
Early musical influences were mainly classical music, American and Latin folk music, some jazz and Israeli folk songs. Later, pop and rock music, jazz and eventually a blend of them all.

After a few years of basic classical piano lessons, Ittai had enrolled to a special teenage music program at the Rubin Academy in Jerusalem, studying jazz piano with Mr. Nahum Perperkovitch. He later continued his piano studies with jazz pianist Liz Magnes and then switched back to classical piano. After one year with Mrs. Semadar Carmi Gibermann he enrolled again to the academy and studied a short period with Prof. Emanuel Krasovsky and Prof. Mark Copitman.

During 1986-1989 Ittai studied with classical pianist Susan Cohen and then moved to Boston, to attend Berklee College of Music.

At Berklee Ittai composed and arranged many pieces for big bands lead by Herb Pomeroy and Phil Wilson, studied with arrangers Pomeroy, Richard Evans, Bob Freedman, Bud Billings, Dennis Grillo and composers John Bavicci, Dennis Leclaire and Greg Fritze. Graduated with BA. of Mus. degree in commercial arranging, moved back to Israel and wrote music for endless jingles, a few film-scores, music for TV shows and some major scores for ballet and theatre. Performed and recorded with some of Israel's top pop productions, arranged music and produced a recording for a children opera, composed a song for the Praemium Erasmianum ceremony at the Dutch Royal Palace in Holland and many other commercial and non-commercial music.

During 1994, tired of the commercial music business, Ittai attended the first year at the Bezalel Academy of Arts in Jerusalem in the Architecture dept. Finally, after deciding to stick to music, founded a band named Ilana Eliya and Jabalio, an ethnic band of instrumentalists and singer, performing mainly interpretations of music from Khurdistan. Produced and arranged music for the band's CD (Released on MCI-Israel 2-84026), for live performances and toured with the group to Italy, Germany and France.

Later studies include vocal training with Mrs. Hedva Maller, harmony and ear-training with prof. Dr. Bat-Sheva Rubinstein and further harmony studies with Dr. Erez Rapoport.

Composed a cycle of pieces for solo piano, a score for theatre, a piece for eight instruments commissioned by the Kaprizma Ensemble for Contemporary Music, and a few pieces for chamber music for mandolin. During 2000-2002 a large suite for varying ensemble and a narrator was composed in collaboration with the poet Liat Kaplan. The piece was named Between Waters and Waters and was released in 2009.

Founded the Yellow Submarine Ensemble (YSE) with guitarist Atcha Bar in 2000 and performed and recorded original jazz music. The YSE had perfomed at the Red Sea Jazz festival and at the Jerusalem International Jazz festival. Among several artists accompanied by the ensemble was be-bop legendary singer Sheila Jordan. Released a CD in 2008 of jazz fantasies based on ancient Ladino (Jewish-Spanish) songs, performed by an ensemble of a singer, jazz quintet with a string quartet.
